Easy Weeknight Dinners for the School Year

School dinner ideas can be so difficult to put together. We often have nonstop busy days that we are exhausted by the time dinner comes around. When you’ve had long days and busy weeknights of after school activities and homework, having recipes on hand are essential. I’m pulling together family favorite dinner options to make easy weeknight meals everyone will love! These are nutritious and save well for leftovers, too!

I love easy recipes like this! It’s one of those options where you can pretty much throw everything on a pan to bake and the oven takes care of everything for you.

We can’t wait to start making homemade soups in the fall! This is a classic option that everyone loves so it’s a pretty safe dinner to have prepped and ready to go. The best part is that there are leftovers for days.

Getting omega 3s in to our meals is not always easy. They’re super important for our bodies and salmon is a great source of them. This recipe is easy to make and best served with rice and broccoli for a nutritious meal.

One recipe we have been making for years is stuffed peppers. They are not only a healthy meal option but the kids find them super fun to help make. Everything bakes in the oven once the meat is cooked and it’s so easy to prep.

Who doesn’t love fried rice?! As a busy mom, this is a meal I have on hand always. The ingredients are all things I tend to have in the fridge already and it all gets thrown together in the most delicious way. And a little bit of ingredients goes a very long way, this saves well for days.

This has been more of a trend lately and we are not complaining. Burgers are always a good idea and finding a way to make them healthier has been fun. You essentially are taking what would go on a burger and making it into a bowl and the kids love it!

This is a fun twist on a typical pasta dish and it’s delicious! I love how easy it is to make and adding in the greens is a fantastic way to get some veggies into the dish.

For anyone looking for a vegan or vegetarian option, these are so good! The kids love wrapping them too, so they’re kind of an activity and meal all in one. But you can add any type of sauce you prefer, we love peanut and dip them for a healthy weeknight meal.

Quinoa is a healthy option for a grain and it’s one that we have been trying to find new ways to cook. Adding skillet cooked shrimp and quinoa to cook all together is not only delicious but it’s incredibly easy to put together. It doesn’t take long to make either so it’s perfect for those busier days.

It’s no secret Greek is one of our favorite cuisines. This is a really awesome option because you can put all the ingredients in different bowls and let everyone make up their own plates. It’s healthy chicken and veggies, top it with Feta for that perfect salty bite, too!

We love to do taco Tuesdays and while we typically do ground beef, we have been looking to switch things up a little. Swapping for fish is a healthy alternative and there are so many other options you can add like fresh mango for a tangy bite.

Her is another great vegetarian option and it’s full of protein! We love putting these together with different toppings each time and they actually make for a great lunch, as well.

These look like chicken fingers, but they are actually fish!  The kids love them and they are incredibly simple to prep, bake and save for an easy weeknight meal to have on hand.

Finally, the kids love pizza and store bought dough can be not so simple to work with always. These are a great option because the naan is already cooked so all you need to do is add toppings to broil in the oven or bake in an air fryer and you are all set to go! You can personalize each one too so everyone can get what they want.
